Project Topic The GOUDA consortium will develop unique technologies for creating clean, animal-free dairy alternatives in sustainable manner. The project will deliver several prototype cheese alternatives with desired functional and nutritional attributes. Recombinant milk proteins derived from precision fermentation and healthy plant-based fats will constitute these alternatives. After the project, manufacturing will be optimized to scale-up for commercial production and enter target markets.
