Project Topic The goal of this project is to create novel brewing yeast strains through breeding, tailored for the production of hoppy and fruity beer styles which are increasing in popularity. Both CRISPR-Cas9 assisted breeding as well as conventional breeding strategies will be employed to develop new hybrid yeasts with enhanced flavour production capabilities. The global craft brewing industry is growing in market share, and needs enhanced flavours and product distinctiveness.
