Project Topic Finding preservation strategies that extend the shelf life of products as much as possible, without compromising safety and quality, is a critical factor for the strategy and operation food companies. This generates the emergence of a novel technological trend for searching preservation procedures that are softer compared to taditional thermal approaches, keeping their effectiveness over microbial mix. Moreover, Food safety and quality are the most critical factors to be maintained during the whole value chain, from primary production to the final consumption by consumers. An important bottleneck in this line is the lack of fast and reliable sensoring tools for the real-time determination of product status. In this context we propose the LENTERDCOS project that will pursue two main final results: i) on the one hand increasing the shelf life of packaged (MAP and skin) fresh beef and horse meat, as well as other processed products using these types of meat, through pulsed UV-C LED lighting; ii) on the other, a fast and reliable digital monitoring and control of the food shelf life based in NIR Spectroscopy
