Project Topic A world cheese market revolution through new processes for the elaboration of hard and semi-hard cheeses satisfying demand “just in time” without maturation time. We will deliver cheeses with: - Improvement of functional properties for its use as a culinary ingredient. - Longer life and possibility of doing non-refrigerated logistics increasing the possibilities of export - Decoupling the component of texture and technical functionalities of the matrix from to the aromatic component.
