Project Topic The project aims to develop an online fluorescence-based sensor to monitor the critical process parameter affecting the safety, acrylamide as a key carcinogenic NeoFormed Compound (NFC), of fried food products, and other quality criteria (polar compounds from lipid oxidation, water and fat contents). Fried food producers will be provided with an on-line PAT analyser to control the final product safety by standardizing the quality through automatic process retro-control
